Sultana Raisins --- 30g A. Cranberries --- 30g A. Citrus Peel --- 30g Unsalted Butter --- 100g (room temperature) Castor Sugar --- 100g Eggs (Medium) --- 3 B. Plain Yogurt --- 2 Tablespoons B. Vanilla Paste --- 1/4 Teaspoon B. Rum --- 1 Teaspoon B. Orange Zest --- 1 Orange Self-Raising Flour --- 150g Pinch of Sea Salt Baking Powder --- 1/4 Teaspoon *Preheat oven to 200°C / 180°C (fan) / Preheat to Gas Mark 6. 1. Grease a mold with butter (not included) and dust with bread flour (not included). Shake off any excess. 2. Coat the dried fruit (A) with 1 tablespoon of the 150g self-raising flour. Mix the self-raising flour, sea salt, and baking powder together. 3. Place the butter in a bowl and beat with an electric mixer. Add the caster sugar and beat until fluffy. Add the eggs one at a time, mixing after each addition. Add B and mix, then sift the flour mixture while mixing. 4. Mix in the dried fruit (2). 5. Pour into the prepared mold and bake in a preheated oven for 15-18 minutes, until cooked through and golden brown. Remove from the mold and allow to cool completely.
