This is Kwangmanito from Manimani~^^ The place I visited today is 'Jangbi Bimguksu and Pyeonyuk Main Branch,' a noodle restaurant located in Geumgok-dong, Bundang-gu, Seongnam-si, Gyeonggi-do. It was recommended by Korean traditional music YouTuber Bandohee, and it's not far from my parents' house, so I decided to visit. Actually, I was craving bibim guksu that day. Hehe. I usually research the characteristics of the food before going to a restaurant, believing that knowledge makes the food taste better. This restaurant was unique in that they make the bibim guksu sauce fresh upon ordering. They say that if you make the marinade in advance, the refreshing and light flavor disappears and the taste becomes more earthy. Another unique feature is the vegetable vinegar, made with 70kg of cucumbers and 11 different vegetables. They say the more green vegetables you add, the deeper the flavor becomes. After 20 days of fermentation, the color of the vegetable vinegar changes from green to brown, which was quite surprising. The chewy, medium-thick noodles, well-seasoned with a sweet and sour sauce, were surprisingly delicious. We also ordered boiled pork and seafood pancakes. The boiled pork wasn't flattened and solidified, but steamed in water, giving it a texture more similar to moist pork belly. The tender texture and rich meat juices were amazing. The seafood pancake, crispy on the outside and moist on the inside, was incredibly generous with a variety of seafood and vegetables. It was so delicious that I smiled the whole time I was eating it. Mixing rice with the final bibim guksu sauce was also delicious. Since this restaurant also had many dishes featuring oysters, I couldn't just pass it up, so I had oyster soup and a bottle of soju.
