Bake OFF PEAR TARTE TATIN Recipe - Technical Challenge

Equipment Pastry Matt https://amzn.to/3XJeFCG DJI Osmo https://amzn.to/3ZLuhbk Suction Phone Mount https://amzn.to/47Q35dt You have 2 hours 30 minutes to complete this challenge. Good luck! Here’s the ingredients list and method: INGREDIENTS For the Rough Puff Pastry 200g Plain Flour Pinch of Salt 35g Unsalted Butter cut into cubes and chilled 5-7 TBSP Ice Cold Water 80g Unsalted Butter, Frozen For The Tarte Tatin 125g Caster Sugar 50g Unsalted Butter, cut into cubes 4-5 Pears METHOD Make a Rough Puff pastry Add sugar to pan and cook until a golden caramel. Combine with butter. Add peeled, cored and halved pears to pan and cook until tender. Remove pears from pan and set aside. Pour out most of sauce leaving a thin layer. Re-add the pears to the pan and roll out the pastry on top. Bake. Invert the Tarte Tatin onto serving plate and serve with reheated caramel sauce. Good Luck!!
