Grate the onion and drain using a colander. Then wrap in paper towels and squeeze. * Thoroughly draining the water will eliminate the onion's distinctive odor and allow the sweetness to shine through. 2. Add the seasonings to the ground meat and knead. Place the ground meat in a bowl and add the seasonings (salt, soy sauce, and oyster sauce) and knead well. Once the meat is firm, add the beaten eggs in two batches and knead. Once the eggs are incorporated, add the ginger and sugar and mix. Add the onion and mix slowly and gently. Add the potato starch in two batches and mix, then add the sesame oil. Spread the mixture on a tray and place a larger tray with ice underneath to chill. *You can also spread the mixture on a flat plate and chill in the refrigerator. 3. Wrap the filling in the shumai wrappers. 4. Steam for 8-9 minutes in a steamer with plenty of steam. Finish! Delicious as is, but we also recommend adding a little mustard or soy sauce to taste!
