Delicious green sorrel soup (shchi with sorrel) Light, aromatic and very healthy soup based on sorrel – a classic of spring and summer cuisine! Rich in fresh greens, tender potatoes and eggs, it is colorful, refreshing and at the same time filling. Perfect for anyone who is watching their figure and blood sugar levels – high in fiber, low in calories and naturally valuable nutrients. Ingredients (for approx. 4 servings): 1 liter water 300 g potatoes 100 g fresh sorrel 100 g carrots 50 g onions, 50 g spring onions 30 g dill 30 g leeks vegetable oil (2-3 tbsp) 1 egg (hard-boiled) ½ tsp salt ¼ tsp black pepper 1 bay leaf Preparation: Bring 1 liter of water to a boil in a pot. Cut the potatoes into cubes and cook in boiling water for about 10-15 minutes. Meanwhile, finely chop the carrots and onions and fry them in vegetable oil until golden brown. Add the patties, along with bay leaf, salt and black pepper, to the pot with the potatoes. Finely chop sorrel, spring onions, dill and leeks and add the entire green mixture to the soup 3-5 minutes before the end of the cooking time. Let it simmer for another 1-2 minutes so that the greens retain their bright color and aroma. Remove the soup from the heat. Serve hot and place half or a quarter slice of hard-boiled egg in each bowl. Health benefits: This soup is a real vitamin boost! Sorrel, dill, onions and carrots are rich in fiber, accelerate metabolism, help eliminate excess fluid and keep blood sugar levels stable.
