Cut zucchini, bell bell pepper, and eggplant into small pieces. (* Cut the eggplant last to prevent discoloration.) 【2】Heat the garlic and olive oil in a heavy saucepan over low heat. When fragrant, saute the onions. [3] When the onions have softened, add the eggplant, zucchini and paprika. Sprinkle with salt and pepper and saute for 5-6 minutes. 【4】Add crushed canned whole tomatoes, miso and bay leaves. Bring to a boil, cover with a lid and simmer for 20-30 minutes, stirring occasionally. Taste and adjust seasoning with salt and pepper.
