¿Qué es el Guaje Garabato? El Caldo Tradicional de Xoxocotla
Xoxocotla, an indigenous town in southern Morelos, keeps alive one of the oldest cuisines in the Nahua region. Here, corn remains the heart of the table: it is nixtamalized at dawn, ground on a metate, and transformed into handmade tortillas, tlacoyos, and tamales, which are cooked on the tlecuil, the traditional hearth. The aromas of chili peppers, epazote, and quelites mingle in clay pots that simmer slowly, just as grandmothers and great-grandmothers did. In every home, red and green moles, pipianes, chileatoles, and hearty broths are prepared. Traditional cooks combine local ingredients such as squash blossoms, seasonal mushrooms, and hoja santa, creating flavors that tell ancient stories. During celebrations, ceremonial tortillas are decorated by hand, as a gesture of respect for the land and the ancestors. And today we'll discover one of the region's most representative dishes: caldo con guaje garabato (a type of bean soup). A broth that seems simple at first glance, but is deeply connected to the season and the town's identity.
