Amidst hearths, clay pots, and traditional cooking, we discovered the unusual and ancestral mole with chilacayote squash: a dish that forms part of the culinary memory of the communities near Popocatépetl 🌋 As an accompaniment, the dish is served with seasonal quelites (wild greens) 🌿 harvested and prepared following traditional field cooking practices. Simple ingredients that are part of the daily diet of many communities and that preserve flavors, knowledge, and ways of relating to the land that still survive in home kitchens.
