Thank you for watching today's video! (^^) I've been receiving many requests for pork shogayaki for a long time, and after some trial and error, it's finally here! (^^) This recipe isn't exactly shogayaki, and there's a lot of washing up to do, so it might be a bit of a challenge, but the flavor is incredibly rich, and it pairs so well with rice it'll send you flying to Mars. (#^^#) ⇩Click here for the detailed recipe⇩ ~Making the Sauce~ -Cut the ginger, garlic, and onion into manageable pieces. -Mix soy sauce, sake, and mirin in a 2:3:3 ratio. -Add the ginger, garlic, and onion to a blender, then pour in the seasoning mixture until just covering the ingredients. -Blend the sauce by turning the blender until it becomes liquid. ~ Preparing the ingredients: Slice the onion into wedges along the grain to preserve its texture. Separate the pork into individual pieces and season very lightly with salt and pepper. Grate and squeeze the ginger to prepare the ginger juice. Julienne the ginger to use as a garnish, leaving the skin on. *For a more visually appealing dish, scrape the skin off with a spoon, then slice it into strips and garnish it on top. ^^ Main Cooking: Lightly oil a frying pan, add the onions, season with a pinch of salt and pepper, and sauté over high heat. Once the onions are slightly translucent, transfer to a plate. Once the pan is clean, brown the pork until golden brown. Remove from the frying pan. It's okay if some parts are still raw. *Draining excess oil at this point will make the sauce easier to coat later. (^^) Pour the sauce into a frying pan (after wiping off excess oil), place on the heat, and simmer, skimming off any scum, until the sauce thickens. Add the pork and simmer until thoroughly coated. Once the pork is cooked through, drizzle with squeezed ginger juice to add a fragrant ginger flavor. Place the pork on top of the onions and garnish with shredded ginger.
