However, after November, which is the best time for asparagus to grow, the asparagus itself begins to actively photosynthesize and its storage roots grow, sending out more and more nutrients in preparation for the next year. The asparagus that made it through the harsh summer and continued to sprout new shoots in the fall begins to prepare for the next year in November. In addition, November is also the best weather for photosynthesis. What can we do to reward the asparagus that has worked so hard since February? This is the management method we arrived at after thinking about it. It is a slightly different management method from that of ordinary asparagus farmers, but I think it makes sense from the asparagus's point of view. As a result, we are able to produce spring asparagus that is free of strings and is sweet and not bitter almost every year. This spring asparagus is almost sold out for individuals and restaurants. Asparagus is something that super high-end restaurants and famous chefs look forward to every year, but I don't grow it, it's grown by the asparagus. (I'm not a humble person myself, but I truly believe this.) So, not just in November, I consult with the asparagus all year round, make my own guesses, and manage it. To be honest, I'm relieved that we've been able to get this far this year. It's been like this since my time at Rakuten, but our repeat rate is over 90%, so we can't betray our customers' trust, even in the unlikely event that something happens. So, I've been spending the year with an obsession that we have to harvest spring asparagus of the same quality as usual, no matter what. I'm not thinking about expanding, and I'm already old (lol), so I don't know how many more years I can grow it, but I hope to experience a season that I can be almost satisfied with, even if it's just once.
