Mimosa cake is a classic Italian dessert that has become a symbol of March 8th, International Women's Day. It is made of layers of sponge cake, filled with diplomat cream or Chantilly cream, and decorated with sponge cake cubes that resemble mimosa flowers. Mimosa cake was created in 1950 in Rieti by pastry chef Adelmo Renzi, but it only became famous in 1962, when it won first place in a pastry competition in Sanremo, where it was presented as a tribute to the city of flowers.
