HONEY GRILLED CHICKEN RECIPE INGREDIENTS: 2-3 kg chicken pieces 4 tablespoons cooking oil Water as needed GROUND SPICES: 20 cloves garlic 8 cloves shallots 6 candlenuts 2 pieces ginger 2 teaspoons turmeric powder 1 1/2 teaspoons pepper powder 1 1/2 teaspoons coriander powder 1 teaspoon cumin powder 2 teaspoons salt or to taste 1 teaspoon bouillon powder 2 teaspoons granulated sugar 2 lemongrass 2 pieces galangal 1 tablespoon tamarind OTHER SPICES: 4 bay leaves 5 lime leaves 8 tablespoons honey 5 tablespoons sweet soy sauce GRILLED CHICKEN SLICING: Remaining rib stock + 2 tablespoons sweet soy sauce COOKING DIRECTIONS HONEY-GARLED CHICKEN: Heat oil in a pan and sauté the finely chopped bamboo shoots, bay leaves, and lime leaves until cooked through, then add the water. Add salt, bouillon powder, tamarind, sweet soy sauce, and honey. Add the chicken and cook until cooked through and tender. Grill the chicken by basting it with the chicken rub and turning it over. (Here, I baked it in an oven at 170 degrees for 20-30 minutes.) Serve with rice, fresh vegetables, and chili sauce to taste.
