To save time, we used ready-made, super-thin fresh pasta, which doesn't require pre-cooking. However, you can replicate the recipe by making fresh pasta at home: in this case, it's recommended to parboil the pasta sheets before filling them. 1. Prepare the béchamel sauce. Dissolve 50g of white flour in about 100ml of cold milk. Bring the remaining milk to a boil, season with salt, pepper, and nutmeg. When the milk boils, add the dissolved flour and stir until the desired consistency is achieved. Season the béchamel with grated Parmesan cheese. Cover with a sheet of plastic wrap directly on the béchamel sauce: this will prevent a crust from forming on the surface. 2. Place a sheet of fresh egg pasta on a cutting board. 3. Spread a generous layer of stracchino cheese over the entire surface of the pasta sheet. 4. Arrange a slice of cooked ham on top of the stracchino cheese. Spread a teaspoon of béchamel sauce on one short side of the pasta sheet. Roll the pasta, starting with the short side, with the béchamel sauce, until you have cannelloni. Set aside. Repeat until all the ingredients are used. 5. Spread a spoonful of béchamel sauce on the bottom of a glass or aluminum baking dish. 6. Cut the cannelloni into three pieces, creating even nests. Arrange the pasta nests in the baking dish, one next to the other, with the crimped side facing up. 7. Cover with the remaining béchamel sauce and line the baking dish with aluminum foil. Bake the nests in a preheated oven at 180°C for 30 minutes. About ten minutes before the end of baking, remove the aluminum foil from the baking dish to brown the nests. 8.
