Today I made a simple, vegetable-based Chirashi Sushi. It’s a style of sushi that doesn’t require rolling or shaping. There are many kinds of sushi in Japan, and Chirashi Sushi is one of them. “Chirashi” means “scattered” — ingredients are gently placed over the rice.
