How do Japanese people eat tofu? In this video, I’m introducing hiyayakko — one of the most common and beloved tofu dishes in Japan. Today, I made 5 simple plant-based variations. Hiyayakko is a dish that lets you enjoy the natural taste of tofu itself. The tofu is served cold, without cooking, and topped with simple seasonings and fresh ingredients. Because it’s so quick and easy to prepare, hiyayakko is often made as a small side dish in Japanese homes, especially during summer. You can think of it as a small tofu salad — or make a larger version as a light meal on its own.
