BARBADOS PUDDING & SOUSE

Pudding and souse is a traditional dish found in Barbados through out every community. It's a dish made mainly on Saturday mornings. The souse is made from various parts of the pig, and the pudding is made with seasoned sweet potatoes. I've change this recipe up a little and made the souse with chicken instead of the traditional pork. Combine the two and you have a beautiful combination of Barbados pudding and souse. Try it once and you will fall in love. You will need for Pudding 4 lbs sweet potatoes 1 lg onion 4 scallions 1/4 tsp fresh pepper 1 tsp salt 1/8 clove 1 cup sugar 1/2 tsp in black pepper 1 cup water Peel and grate potatoes add all ingredients together, mix well and taste, pour all mixed ingredients into greased baking dish place in oven at 350 degrees bake until inside is cooked. What you'll need for Souse 1 lg chicken cut up and seasoned 3 cucumber limes to taste salt to taste parsley onion Seasoned chicken with onion, thyme, garlic, and all purpose seasoning, add to boiling water. Cook for about 20 mins remove chicken and set aside to cool Chop cucumbers, parsley, onion, place in bowl, add lemon or lime juice, and salt to taste. Add chicken to cucumber pickle and set aside to incorporate flavors. Serve your black pudding and Souse together add a piece of breadfruit and wallah! enjoy.
