The simple peach cake has many slices of fruit that remain on the surface (do not sink). It is a kind of fluffy sponge cake that rises when baked thanks to the air from the whipped egg whites. It does NOT contain baking powder and yet it comes out perfect every time, regardless of the fruits I tested this composition with: cherries, strawberries, sour cherries, peaches or nectarines, apricots, plums or tutti frutti (I leave you these recipes below).
