Add the cheese to the mixing bowl and chop for 5 seconds/speed 10, then transfer to a bowl. Add the onion to the mixing bowl and chop for 5 seconds/speed 5, then scrape down the sides with a spatula. Add the herb crème fraîche, diced bacon, chives, salt, pepper, and shredded cheese and mix for 10 seconds/speed 3. Unroll 1 sheet of puff pastry, place it on the prepared baking sheet, and spread the tarte flambée mixture evenly over it. Unroll the 2nd sheet of puff pastry and place it on top. Press the edges together with a fork. Whisk together the egg yolk and milk and brush the puff pastry with the mixture. Then cut the puff pastry into pieces using a pizza cutter, sprinkle some sesame seeds on top, and bake at 190°C fan/convection oven for 18-20 minutes until golden brown. Enjoy your meal!
