Chives in rolls 1 pinch of salt 1 pinch of pepper 1 pack of mini mozzarella balls, halved (175g drained weight) Place water, yeast, and sugar in the mixing bowl and heat for 2 minutes at 37°C/speed 2. Add flour, salt, and olive oil and knead for 3 minutes at speed 2. Transfer dough to an oiled bowl and let rise for 30 minutes. During this time, make garlic butter. Place butter in a small bowl, crush garlic cloves with a garlic press, add to the butter, and add salt, pepper, and chives. Mix everything together with a fork. Line a baking sheet with parchment paper and preheat oven to 220°C/425°F. Slide the dough onto the prepared baking sheet and press into a focaccia shape. Use your fingers to make indentations in the dough, add the prepared garlic butter, and arrange mini mozzarella balls on top.
