Blood is maintained within a very narrow range thanks to the work of the lungs, kidneys, and buffer systems. However, this does not mean that the composition of the diet is unimportant. The body produces acids every day during metabolic processes. If the diet also provides a high amount of acid-forming foods and few nutrients that support acid neutralization and excretion, regulatory mechanisms must work more intensively. This is referred to as a high acid load diet, not rapid blood acidosis. 🧪 Foods high in protein, salt, and some grains can increase the acid load. Vegetables, fruits, tubers, and water rich in bicarbonates provide compounds from which the body can create alkaline substances. 🦴 Prolonged stress on buffer systems can promote bone mineral loss, muscle weakness, increased uric acid levels, decreased insulin sensitivity, and increased kidney strain. Kidney health is particularly important, as their ability to remove hydrogen ions gradually declines with age. 🔬 Studies conducted on fruit flies and mice indicate that proton accumulation in lymph and the space surrounding cells can occur during aging, even though blood pH remains normal. In experiments, this phenomenon has been associated with shorter lifespans, impaired energy production, and increased oxidative stress and inflammation. These results are important clues, but do not yet constitute direct evidence of the same effect in humans. 🧬 This episode also discusses the CF6 protein. In animal studies, its concentration increased with, among other things, high sodium intake and elevated glucose levels. This protein can impair proton removal from cells, lead to cell acidification, and affect mitochondria, autophagy, DNA stability, and the expression of genes associated with aging. 🧂 Sodium is essential for the nervous system, muscles, water balance, thyroid function, and gastric hydrochloric acid production. The problem isn't salt consumption itself, but excess salt, especially when the diet is low in potassium and alkaline-forming foods. High amounts of salt from water, cured meats, cheeses, convenience foods, and additional salting can add up. 🥩 Ketogenic diets, carnivora, and other low-carb diets may be appropriate in certain situations, but they should also be assessed for acid-base balance. Ketone bodies are acids, so this type of diet should be balanced with low-starch vegetables, appropriately balanced fluids, and an adequate supply of minerals. 🥬 The practical conclusion isn't to completely eliminate meat or salt. The most important thing is to maintain balance: regularly eating vegetables and fruits appropriate for your health, avoiding excess sodium, ensuring adequate potassium intake, monitoring glucose levels, and drinking good-quality water.
