De arrosticini van Toscanini
Leonardo Pacenti, chef and co-owner of restaurant Toscanini in Amsterdam, makes a popular snack from the Abruzzo region: arrosticini. It is essentially lamb satay, although in the Abruzzo region, castrated sheep are used for it. Leonardo makes the arrosticini in two ways: using a handy cutting board, and by hand for those who do not have one. The recipe comes from the book Antipasti, which features all of Toscanini's appetizers.
