De arrosticini van Toscanini

Leonardo Pacenti, chef and co-owner of restaurant Toscanini in Amsterdam, makes a popular snack from the Abruzzo region: arrosticini. It is essentially lamb satay, although in the Abruzzo region, castrated sheep are used for it. Leonardo makes the arrosticini in two ways: using a handy cutting board, and by hand for those who do not have one. The recipe comes from the book Antipasti, which features all of Toscanini's appetizers. You can order the book via this link: https://foodt.be/Antipasti and if you do, you support both Foodtube and a physical bookstore without it costing you anything extra.
