Wil Demandt, the legendary chef-patron of restaurant Bordewijk in Amsterdam, makes a classic French dish: tête de veau. He cooks a whole calf's head for it, after removing the tongue. The tongue is also cooked, but for a shorter time than the head, hence the reason. Wil also prepares the calf's brains (which require even less cooking time) in a separate pan.
