At Tom's pub, The Coach, teamwork is essential for success. The kitchen operates with a strict hierarchy, like a team of huskies pulling a sled, as Tom describes. Leading the pack is Head Chef Sarah who oversees the team of sous chefs, chefs de partie, and commis chefs to ensure Michelin-star standards are met. Tom fondly recalls his early days as a junior chef. This episode’s lunch is Roast Loin of Pork accompanied by cauliflower cheese and potato cakes, a dish where each chef's role is crucial to its preparation and service, reflecting a miniature version of a traditional Sunday roast. In his test kitchen, Tom also introduces three pub-style dishes that can be prepared at home, including a pork dish enhanced with Calvados, mustard and apple sauce. There’s also a sharing starter of Paneer and Pea Fritters, and Tom’s dessert is Baked Pears with Peanut Brittle.
