Spoiler: it wasn't even close. 🍔🍔 Easy Homemade Sweet Potato Burger Buns Makes: 6 buns | Cost: $4.11 total — just 69¢ per bun (vs $6.75 store-bought = $1.12 per bun) INGREDIENTS 🥔 Dough: 450g bread flour 160g mashed sweet potato (~1 small-medium sweet potato) 120g whole milk, lukewarm 60g unsalted butter, softened 2 large eggs 25g granulated sugar 9g kosher salt 7g instant yeast 🥚 Egg Wash: 2 egg yolks + splash of milk ✨ Optional: sesame seeds for topping INSTRUCTIONS 1. Simmer the sweet potato until fork-tender. Let cool, then mash 160g until completely smooth. 2. In a stand mixer bowl, combine flour, salt, sugar, and yeast. Add mashed sweet potato, eggs, and lukewarm milk. 3. Mix on low with the dough hook for 7–8 minutes until the dough comes together. 4. Add softened butter a few pieces at a time. Increase to medium-high speed and knead another 7–8 minutes until smooth and elastic. 5. Shape into a ball, place in a lightly oiled bowl, cover, and proof for 1–2 hours until doubled in size. 6. Punch down the dough and divide into 6 equal pieces (~140g each). 7. Shape into tight balls using surface tension, place in nonstick baking rings, and gently flatten to about 4–4.5" diameter. 8.
