Crab Legs in Coconut Milk Ingredients: 1 kg of crab legs 1 liter of coconut milk 1 liter of water 1 red onion 1 white onion 1 tomato 1 green bell pepper 1 red bell pepper 1 yellow bell pepper 1-2 units of finger chili peppers and/or sweet peppers 100 ml of olive oil 1 bunch of cilantro/chives 4 cloves of garlic 1 tablespoon of palm oil (optional) Preparation: Cut all the ingredients and set aside separately. Heat a pan with the olive oil and sauté in the following sequence: Red and white onions, the mix of bell peppers, the garlic, the tomato, the sweet peppers, and the finger chili peppers. Add the coconut milk and water, salt, and bring to a boil. Process more than half of the broth in a blender. Return to the pan, add the crab legs and let it simmer to enhance the flavor, for about 20 minutes. Adjust the salt, turn off the heat and add the cilantro and scallions. Serve immediately.
