ARROZ DE BACALHAU PORTUGUÊS
Portuguese Cod Rice Ingredients: 2 cups of long-grain rice 500g of desalted cod 1 chopped onion 4 whole cloves of garlic 4 leaves of kale 12 cherry tomatoes 20 pitted black olives ¼ bunch of chopped chives 1 sprig of rosemary 2 tablespoons of chopped cilantro 3 tablespoons of chopped leek 3 cloves of chopped garlic 2 chopped chili peppers 2 bay leaves 4 hard-boiled eggs Olive oil, salt and black pepper to taste Preparation: Cook the cod with 1 liter of water, the bay leaves and 4 lightly crushed cloves of garlic for approximately 10 minutes. Do not discard the water and reserve. In a pan, add a generous drizzle of olive oil, the onion, the chopped garlic, the leek and sauté until the onion is translucent. Add the rice and sauté for 2 minutes. Add the water used to cook the cod, mix, and let it cook for 5 minutes. Add the cod, a little chopped rosemary, and mix. Add a little salt. When the rice is almost ready, add the kale, bell pepper, and mix. Adjust the salt, add a little black pepper and a little more olive oil. Place in a serving dish, top the rice with olives, halved cherry tomatoes, and hard-boiled eggs, sliced or chopped. Serve immediately. Preparation time: 10 min Cooking time: 25 min
