PORK CURRY BY SANTIAGO DEL AZAR With Asian inspiration, this dish is going to be a hit this winter. INGREDIENTS 600g cubed pork (shoulder or loin). One large chopped onion. Two minced garlic cloves. 2cm grated ginger. 2 tbsp curry powder. One tsp turmeric. One tbsp tomato paste. 400ml coconut milk (1 can). One tbsp lime juice. Oil. Salt and pepper. Whole cilantro leaves. White rice to serve. INSTRUCTIONS 1) Heat a little oil in a pot or deep frying pan. Brown the pork cubes over high heat until golden. Remove and set aside. 2) In the same pot, sauté the onion until tender. Add the garlic and ginger and cook for one minute. 3) Add the curry powder and turmeric, making a well in the center so they can warm up slightly with the direct heat of the pot. Cook for 30 seconds to release their aroma. 4) Add the tomato paste and return the pork to the pot. Mix well. 5) Add the coconut milk, salt, pepper, and honey. Cover and cook over low heat for 25–30 minutes, until the pork is tender. 6) Adjust the salt and pepper. Turn off the heat and stir in the lime juice. 7) Serve with white rice cooked with garlic, vegetable broth, and salt. Garnish with whole cilantro leaves.
