To answer this question, we traveled to the municipality of San Carlos in the department of Antioquia and met Don Oscar Pineda, an organic cacao producer, and Luisa Gómez, manager of a cacao processing plant. They told us about the importance of working in a clean and environmentally friendly way, and how this is reflected in the final product: artisanal chocolate. Chocolate is a food obtained by mixing sugar with two products derived from processing cacao beans: cacao mass and cacao butter. From this basic combination, different types of chocolate are made, depending on the proportion of these elements and how they are mixed.
