Ingredients: For rich broth and soup: 🍗 Chicken quarter (meaty) — 1 pc. 💧 Water (cold) - for broth 🥔 Potatoes - 3-4 pcs. 🧅 Onion - 1 pc. 🥕 Carrot - 1 pc. 🧈 Butter - a good piece (for frying) ⚫ Allspice and black pepper - a few peas 🌿 Fresh thyme - a few sprigs 🍃 Bay leaf - 1 pc. 🌱 Fresh parsley - a small bunch For the grout itself: 🥚 Egg - 1 pc. 🌾 Flour - 3-4 tbsp. l. (plus a little if necessary) 🧂 Salt - a pinch Step-by-step recipe: 🍗 Cook the broth: Pour our chicken quarter with cold water and put on the fire. As soon as the broth starts to boil, be sure to remove the foam. 🥚 Knead the dough: In a small bowl, beat the egg with a pinch of salt. In a larger bowl, pour the flour and gradually pour the egg mixture into it. With warm hands, fingertips, gently knead everything into small, fluffy golden lumps. 🥣 Sift the beauty: To make the soup perfect and not too sticky, be sure to sift our mixture through a sieve. The excess flour will fall out, and only beautiful lumps will remain in the sieve. 🥔 Add the potatoes: In the finished boiling broth, throw the diced potatoes and peppercorns. Let it cook for 10-15 minutes. 🥕 Make the stir-fry: Melt a good piece of butter in a frying pan and sauté the finely grated carrots and onions until they become soft. 🍲 Assemble the soup: Carefully remove the chicken to a plate to cool slightly. Add our golden brown stuffing to the broth, and then add the mixture in portions. Stir well immediately so that our dough balls do not stick together! Cook for about 5 minutes. 🌿 The magic of flavors: For a unique aroma, throw sprigs of fresh thyme and a bay leaf into the pan. 🍗 Return the meat: Separate the bones and skin from the cooled chicken, disassemble it into small pieces and return it back to the soup. 🍃 The final touch: Add fresh chopped parsley, turn off the heat, cover and let our dish simmer quietly for 5 minutes.
