Chicken Masala Powder (Makes about 250 g) Whole Spices Coriander seeds – 209 g Cumin seeds – 50 g Fennel seeds – 25 to 30 g Black pepper – 30 g Dry red chillies (Kashmiri) – 40 g Cloves – 20 g Green cardamom – 20 g Cinnamon – 20 g Bay leaves – 8 Mace – 6 pieces Nutmeg – 1 (whole) or 1 tbsp Star anise – 6 Stone flower (Kalpasi) – 10 g (optional but gives restaurant aroma) Powder Spices Turmeric powder – 1 tbsp chilli powder – 2 tbsp Method 1. Dry roast each whole spice separately on low heat until aromatic. 2. Cool completely. 3. Grind into a fine powder. 4. Mix in the turmeric and chilli powder. 5. Store in an airtight glass jar. It stays fresh for 4–6 months.
