INGREDIENTS (for a 5L pot): 1 kg pumpkin, e.g., Marquee De Provance or similar, peeled and cut into approximately 2 cm pieces. 2 onions, diced 2 garlic cloves, minced Peeled and chopped ginger 1 teaspoon Thai green or yellow curry paste 500 ml coconut milk 1 liter broth Herbal salt and pepper Coconut oil DIRECTIONS: Melt the coconut oil in a pot and add the onion, garlic, and ginger. Simmer over low heat, covered, for about 5 minutes. Then add the prepared pumpkin to the pot and simmer for another 5 minutes. Deposit the broth and coconut milk. Once boiling, reduce the heat and add the curry paste*, salt, and pepper. Cook for about 10 minutes, or until the pumpkin is tender. Blend the soup until creamy. Serve with a teaspoon of truffle oil and a sprinkle of lightly fried pumpkin seeds. *You can adjust the spiciness of the soup by adding different amounts of curry paste.
