Cinnamon Raisin English Muffins using the bread machine - Budget Friendly!
If you enjoy English Muffins and don't want all the work of kneading the dough for 8 to 10 minutes then try this bread machine version. I got 15 English Muffins from this batch. Recipe follows: Bread Machine Cinnamon English Muffins Add ingredients to bread machine in the order listed: 1 cup (250 ml) milk 3 Tablespoons (45 ml) butter 1 egg 1/2 teaspoon (2 ml) salt 2 teaspoons (10 ml) sugar 2 teaspoons (10 ml cinnamon) 3 cups (460 gm) Canadian all purpose flour UK and USA strong or bread flour 1 1/2 teaspoons (7 ml) dry yeast Add when the machine indicates to add any ingredients 1/3 cups (80 ml) raisins Cornmeal 1/3 cup (80 ml) Select and start dough cycle. When cycle is finished (my machine takes 2 hours) turn your dough out on to a pile of corn meal (about 1/3 cup (80 ml). Flip doughas you flatten it to make sure each side gets coated with corn meal. Flatten dough into a disk about 1/2 inch (1.25 cm) thickness. Then cut out as many circles (I used a 3 inch (7 cm) biscuit cutter) as you can fit. As you cut them place them on a baking tray shallow sides or no sides. Take the left over dough and form it back into a flattened disk. Keep cutting out more circles until you have used all the dough. Cover with a tea towel and let rise 30 minutes until doubled in height. Heat the cast iron or non stick pan you are going to use to cook them. I set my burner at medium heat this is the part you will have to experiment with as all stoves are different. Your English Muffins should take about 5 minutes per side. When they are done they should be dark golden brown and have hard crust on the outside when side one is done flip them over carefully and cook side two. Cool on a cooling rack, as they cool there should be lines form around the circumference of each English Muffin. As you make these it will become much easier to judge when they are cooked through without burning them. If they are a little doughy be sure to toast them before eating. Also if you want to make plain English Muffins just omit the cinnamon and the raisins. Yummy!
