Three Hour Brown Bread - Budget Friendly!
Demonstrated old school using a wooden spoon and a mixing bowl. Delicious brown bread great with beans, as a grilled cheese sandwich or put some molasses on it. Yummy. Makes 3 loaves. Recipe follows: 3 Hour Brown Bread Goes well with baked beans or cheese Bake in a preheated 325°F (163°C) oven for 60 minutes Makes 3 loaves 3/4 cup (180 ml) molasses plus a bit (about 1 Tablespoon (15 ml) total (195 ml) 1 cup (250 ml) rolled oats (5 minute oats) 2 teaspoons (10 ml) salt 1 cup (250 ml) boiling water 2 Tablespoons (30 ml) shortening 1 cup (250 ml) cold water 8 cups (1224 gm) all purpose (Canada) strong UK Bread flour USA In a separate bowl: 1 cup (250 ml) lukewarm water 3 teaspoons (12 gm) yeast 2 Tablespoons (30 ml) sugar (UK caster sugar) In a large mixing bowl put molasses, rolled oats, salt, shortening and add boiling water, stir well together, then add cold water. Set aside to cool until lukewarm. In a separate small bowl mix together yeast, sugar and lukewarm water, let stand for 10 minutes. When the contents of the large bowl are lukewarm add the yeast mixture and stir together well. Add half of the flour and stir into dough, add the second half of the flour 1 cup (150 gm) at a time mixing in the flour after each addition. When about 3/4 of the flour has been added turn the dough out onto a floured surface and knead the remaining flour into the dough. Keep kneading until all the flour has been mixed into the dough. Cut into 3 equal pieces. Shape the dough into loaves and place in 3 bread pans (5”x9”x3” - 13 cm x 23 cm x 7.5 cm). Oil the top of the loaves. Place the loaves in an area free from drafts and let rise for 2 hours. Bake in a preheated 325 °F (163°C) oven for 1 hour. Turn out of the pans onto a cooling rack. Let cook for 20 minutes before cutting. Freezes well.
