English muffins in a bread machine - digging into the archives for this one.
English Muffin Recipe 1c. warm milk 3T. melted butter 1 egg room temp is best but not necessary 1/2t. salt 1T. sugar 3 1/3c. bread or all purpose flour 2t. yeast cornmeal to dust your dough before you cook it in the pan. Mix all ingredients in your bread machine and run the rough cycle. If you prefer to use a bowl add warm milk, sugar and yeast to the bowl. Let is sit until the yeast starts to bubble. Add all other ingredients to the bowl and mix until incorporated. Knead until it is a good strong dough (3-5 minutes). Let it rest in the bowl about 45 minutes. For either dough once it has doubled in size you will follow the same instructions. Sprinkle your work surface with flour, roll your dough to about 1/2 inch thick. Cut out circles using a cookie cutter, cup or even a tuna can will work. Dust the dough with cornmeal and lay out on a parchment lined cookie sheet for 30 minutes. Don't forget to cut the parchment paper into smaller squares so it is easier to lift. Heat up a cast iron skillet, pan or flat top grill until hot. Add your English muffins to the pan and cook about 7-10 minutes per side. Don't get the heat too hot or they will burn. Cook until they are cooked through. If you are worried about the middle not being fully cooked place them in a 375 degree oven for about 8-10 minutes. These are awesome toasted with some jelly or made into a breakfast sandwich with an egg like we did. Store in a bread bag Welcome to Little Hill Homestead 🤍 We’re so glad you’re here!
