This cake combines the lightness and lightness of a pudding with a delicate custard, creating a harmonious and refined delicacy. Key data: • Quick preparation: Instead of shaping and baking each eclair individually, we recommend assembling a cake from layers of custard, which significantly reduces preparation time. Smooth cream: The pudding, prepared according to a classic recipe, gives the cake a rich flavor and a velvety texture that perfectly complements the crispy cakes. Aesthetics: The cake can be decorated with icing, powdered sugar or chocolate pieces, giving it a festive look and making it a real table decoration. Versatile: The "Lazy Eclair" can be served at family celebrations as well as gatherings of friends. It will be a great dessert for any occasion! Ingredients: Choux pastry: 250 ml water (8.45 fl oz). 100 g butter (3.53 oz). a pinch of salt. 160 g wheat flour (5.64 oz). 4 eggs (medium/large) (approx. 7 oz / 200 g without shell). Cream: • Milk – 450 ml (15.2 oz). • Egg – 2 pieces (approx. 100 g). • Sugar – 100g (3.5oz). • Cornstarch – 45 g (1.6 oz). • Butter (for cream) – 75 g (2.6 oz). • Vanilla sugar – 7.5 g (0.26 oz). The process of making pudding: 1. Mix ingredients: Put 250 ml of water into a pot, add 1000 g of butter and a pinch of salt. Set to medium heat and bring to a boil until the butter has melted. 2. Add flour: As soon as the mixture boils, remove the pan from the heat and quickly add 160g of wheat flour. Stir vigorously with a wooden spoon or whisk until smooth. Return the pan to low heat and continue stirring for another 1 to 2 minutes so that the batter dries slightly and stays behind the sides of the pan. 3. Cool the dough: Place the dough in a bowl and let it cool slightly (approx. 5 to 10 minutes). It should be warm, but not hot. 4. Adding eggs: Add the eggs (4 in total) one at a time to the cooled dough, mixing thoroughly each time until fully combined. The dough should be smooth and shiny. ▎Preparation of the cream: 1. Mix eggs, cornstarch, sugar and milk in a small saucepan. 2. Cook the cream over medium heat, stirring constantly, until it thickens. 3. When the cream starts to boil, boil for another 30 to 60 seconds to allow the starch to set. 4. Cover with cling film and allow to cool completely. ▎Final step: 5. Add 75g of buttercream and vanilla sugar to the cream. 6. Make sure the oil and pudding are at the same temperature before combining them.
