Hello, I'm Jangsawang Imsabu. Today, I'd like to introduce you to Hapjeong's Okdong-style pork gomtang, which has even made its way overseas. This pork gomtang has a very clear broth, unlike the typical thick broth. This pork gomtang is particularly easy to make: just boil it once, and when orders arrive, simply reheat the broth and add the toppings. In the video, I'll introduce the special secret ingredients for this recipe, so be sure to check it out. [Ingredients] 500g pork shoulder (pork) 500g chicken 50g green onion 200g radish 200g onion 30g garlic 2g whole peppercorns 2500-3000ml water (5-6 times the volume of pork) 10-15g water parsley A pinch of Parma ham (prosciutto) A pinch of green onion A pinch of pepper A pinch of salt [Pork gomtang recipe] 1. Soak the shoulder blades in water for 24 hours to remove any blood. 2. Pour water into a pot and bring to a boil. Add the shoulder blades and chicken separately. Blanch for 3-4 minutes. 3. Remove the blanched shoulder blades and chicken separately and rinse under running water. 4. Pour 2,500-3,000 ml of water into the pot again. Add all the remaining ingredients except the water parsley and green onions and heat over high heat. 5. Once it starts to boil, reduce the heat to low just enough to see a few bubbles. 6. Simmer for 4 hours (to remove any impurities that rise to the top of the broth). 7. After 4 hours, strain the broth and ingredients through a sieve. 8. Then, line the sieve again with a cloth and pour in the strained broth. 9. Store the broth and shoulder blades.
