This delicious Pumpkin & Feta Pie in filo pastry is easy to make... it just needs a little time for the preparation, and once cooked can be stored for a couple of days in the fridge until ready to eat and reheats well too. It can be enjoyed cold. It's an original authentic Greek recipe shared with Richard by a colleague. It really is divine and makes a super lunch or dinner and would be ideal for an Autumn buffet, Bonfire Night or Halloween celebration. Give it a go. If you use shop bought pastry it's easy to assemble and cooks in about 40 minutes. The ingredients are Approx. 800g grated Pumpkin or Squash 1 red onion chopped 4 cloves of garlic chopped Olive Oil 1/2 tablespoon dried mint 2 eggs beaten approx. 400g feta cheese crumbled 6 sheets ready made filo pastry salt black pepper 26cm oven proof plate Have a look and be sure to share you thoughts and comments with us.
