CRISPY PUFF PASTRY POCKETS with VANILLA CREAM (Easy & Homemade)

Forget store-bought puff pastry… this homemade version is next level. These crispy puff pastry pockets filled with smooth vanilla cream are light, flaky, and absolutely delicious. 👉 You can find the recipe for homemade puff pastry on my channel. 👉 Or you can simply use store-bought puff pastry to make these pastry pockets. Ingredients (Vanilla Cream): • 2 egg yolks • 50 g sugar (1/4 cup) • 200 ml milk (3/4 cup + 1 tbsp) • 20 g cornstarch (2 1/2 tbsp) • a little vanilla or vanilla paste • 2 tbsp Greek yogurt • 1 tbsp powdered sugar 👨‍🍳 Instructions: First, roll out the puff pastry and shape it into pastry pockets (parcels). Brush them with beaten egg. Bake in a preheated oven at 200°C (392°F) for about 20 minutes, or until golden brown. Meanwhile, prepare the cream: Whisk the egg yolks with sugar until smooth. Add a little hot milk, then stir in vanilla and cornstarch. Cook over medium heat until thickened. Let the mixture cool down. Once cooled, whip it together with whipped cream, then add Greek yogurt and powdered sugar.
