The savoury and deep black sesame flavour...really delicious. I made both praline and ganache using black sesame powder. If you want to use black sesame seeds when making praline, try adjusting the amount of sesame oil. Molding chocolate I used is single origin dark chocolate Tanzanie 75% from Cacao Barry. Chocolate for ganache is White chocolate Velvet 32% from Callebaut. Recipe [Cinnamon Syrup] 200g water 70g sugar 2 g cinnamon powder 2 cloves/cloves (optional) 1 star anise/star anise (optional) 6g pectin + 10g sugar [Black Sesame Praline] 50g black sesame powder (or black sesame seeds) 33g sugar 10 g of water 8 g sesame oil (adjustable) [Black Sesame Ganache] Glucose 60g Cream 105g (35% fat) Pinch of salt 25g black sesame powder 55g white chocolate 2.5g cacao butter (grated) Thank you.
