Ingredients 1 cup Soybeans Water (for soaking & grinding) 3тАУ4 Green chilies (finely chopped) 1-inch Ginger (grated) Fresh Coriander (chopped) ┬╜ tsp Cumin seeds ┬╜ tsp Chili flakes 1 tsp Salt 2 tbsp Vinegar 3 tbsp Water (for vinegar solution) Recipe (Step-by-Step) Step 1 Soak soybeans overnight. Step 2 Rub the soaked beans to remove the skins and rinse well. Step 3 Grind the soybeans with water into a smooth paste. Step 4 Strain through a muslin cloth to extract thick soy milk. Step 5 Add water to the leftover pulp and strain 2тАУ3 more times to obtain thinner soy milk. Tip: Don't waste the soy pulp; use it in dough for extra protein. Step 6 Cook the soy milk on medium flame while stirring continuously. Step 7 Remove the foam regularly. Step 8 Add chopped green chilies, ginger, coriander, cumin, chili flakes and salt. Step 9 Cook until the soy milk boils and loses its raw flavor. Step 10 Turn off the flame and let it cool slightly. Step 11 Mix vinegar with water. Step 12 Slowly pour the vinegar solution into the hot soy milk while stirring. Step 13 Once curdled, let it rest for 10 minutes. Step 14 Strain through a muslin cloth. Step 15 Gently press out excess water. Tip: Do not remove all the moisture; it keeps tofu soft. Step 16 Place under a heavy weight for about 1 hour. Step 17 Cut into cubes.
