Icebox Fruitcake-No Bake-Steph’s Stove

Icebox Fruitcake This is an old fashioned recipe that my Granny made every year at Christmas. She was not a baker but this was her “go to” recipe. I hope you enjoy this as well. 1 - 14 oz box graham crackers 1 cup pecans 1 - 10-oz jar maraschino cherries (chopped) 1 tablespoon cherry juice (reserved from jar) 1 cup raisins 1 cup shredded coconut (firmly packed) 1 ½ cups mini marshmallows 1 - 14 oz can sweetened condensed milk Crush graham crackers finely using a food processor or by hand. In a large mixing bowl add graham cracker crumbs, pecans, cherries, cherry juice, raisins, shredded coconut, marshmallows, and condensed milk. Mix together using a silicone spatula and then by hand to ensure all ingredients are well combined. Place mixture into a well greased loaf pan and press firmly to pack. Chill in the refrigerator for six hours or up to overnight. Slice and enjoy!
