Strawberry Fluff Salad 1 package (3 oz) strawberry gelatin mix 1 cup boiling water 1 cup cold water 1 package (8 oz) cream cheese, softened 1 container (8 oz) whipped topping (like Cool Whip), thawed 2 cups mini marshmallows (feel free to add more if you like) 1 can (20 oz) crushed pineapple, drained 1/2 cup chopped strawberries (optional, for extra flavor) In a large bowl, pour the boiling water over the strawberry gelatin mix. Stir until completely dissolved. Once the gelatin is dissolved, add the cold water. Allow the mixture cool slightly; however, do not allow the gelatin to set. Set aside. Using a hand mixer in a separate bowl, beat the softened cream cheese until smooth and creamy. Gradually add the gelatin mixture into the cream cheese while mixing until smooth and fully combined. Once the strawberry gelatin is fully incorporated into the cream cheese, gently fold in (by hand) the whipped topping until the mixture becomes light, fluffy, and evenly pink. Stir in the mini marshmallows, drained pineapple, and optional chopped strawberries. Cover with plastic wrap and refrigerate for at least 2–3 hours (overnight is best) or until fully set and fluffy. Garnish with extra marshmallows and diced strawberries if desired, and serve family style or in bowls. A perfect cool and refreshing dessert for all of your spring / summer gatherings.
