Ritz Cracker Salted Caramel Icebox Cake 2- 8 oz packages of cream cheese (softened) 1 cup heavy cream 1 cup sugar 1 teaspoon vanilla extract 1 cup caramel sauce ¼ teaspoon +/- Sea salt (for garnish) 48 Ritz crackers (about 1 ½ sleeve) Mix softened cream cheese, heavy cream, sugar, and vanilla extract until well combined and mixture has a smooth consistency. Set aside. Using a medium square baking dish (about 8x8), grease the dish lightly with cooking spray (such as Pam), and place 16 Ritz crackers (whole) on the bottom of the baking dish. Over the Ritz crackers place approximately ⅓ of the cream cheese mixture and smooth. Top with cheese mixture with ⅓ of the caramel sauce and sprinkle lightly with sea salt. Continue layering to create two additional layers. Cover and place in the refrigerator a minimum of four hours or overnight for best results. This will allow the flavors to blend and the Ritz crackers to soften nicely. Serve with additional caramel sauce if desired. Enjoy!
