This cake is from Galicia and is super easy to make, with only 5 ingredients. Plus, this flourless cake is also gluten- and dairy-free. INGREDIENTS: 250g ground almonds = 20 tablespoons 220g sugar = 1 cup = 12 tablespoons 4 eggs Zest of one lemon 1 teaspoon cinnamon Pinch of salt Icing sugar (for decoration) Grease a 22cm round cake tin with oil and preferably line the bottom of the greased tin with parchment paper (the paper helps to remove the cake more easily) PREPARATION: Beat the eggs with the sugar until foamy, add the lemon zest, cinnamon, salt, and almond flour, and mix well. Place in the tin and bake at 180°C (top and bottom heat) for 30 minutes, or until a toothpick inserted into the tin comes out clean. Remove from the oven, let cool completely, and remove from the tin. Place a paper stencil of the Cross of Santiago in the center of the surface and dust the entire surface of the cake well with powdered sugar. Carefully remove the cross stencil and enjoy this delicious, gluten- and lactose-free cake. Enjoy!
