Sift and add to the mixture in 3-4 batches. Gently incorporate without deflating. Continue in the same way until all the dough is used. Fill a piping bag with a nozzle. Pipe the dough onto a baking sheet lined with parchment paper in your desired shapes: long, pear-shaped, or round. Bake in a preheated oven at 150 degrees Celsius for about 20 minutes. Let it cool. For the filling, melt the chocolate in a double boiler or microwave. Spread it on the flat side and join the two together. Dip the end first in chocolate and then in crushed pistachios or coconut.
