Cut the cabbage in half and remove the tough middle part. 2. Separate the leaves individually. 3. Cut into squares. 4. Transfer to a bowl and add the coarse salt. 5. Add water and let it soak for 1 to 2 hours. (Turn every half hour) 6. Chop the dried chili peppers and remove all the seeds. 7. Let them soak for more than half an hour in a bowl of water. 8. Cut the scallions into 5 cm lengths. (If they are too thick, cut them into thin strips, not fine ones.) 9. Dice the onion. 10. In a blender, add the garlic, ginger, chopped onion, and the soaked chilies. 11. Add salt, sugar, and mineral water. Blend well. 12. After 1 to 2 hours, remove the cabbage from the water and wash it in cold water twice. 13. Place the cabbage in a colander to dry. 14. Transfer the cabbage to a bowl and add all the sauce. Mix. 15.
