When the water boils, add the noodles. Stir to prevent the noodles from sticking together. 2. Add a cup of cold water when it begins to boil. 3. Repeat once more. 4. Remove and place in cold water, wash well. 5. Strain through a colander and place on a plate without water. ** Fried noodles with scallion ** 1. In a wok, add oil and scallion and fry. 2. When the scallion begins to change color, add sugar and soy sauce. Fry. 3. Add noodles and fry. 4. Add oyster sauce. Mix. 5. Ready! Enjoy with Hana katsuo (bonito flakes). ** Fried vegetable noodles ** 1. Julienne the onion and carrot. 2. Slice the mushrooms. 3. Chop the scallions and separate the white and green parts. 4. In a pan with a little oil, fry the white part of the scallions. 5. When they begin to change color, add all the vegetables. Fry. 6. Place the cooked vegetables on a plate. 7. In a pan with a little oil, make a thin egg omelet. 8. Cool slightly and cut into strips. Place on a plate. 9. In a wok, add olive oil, scallions, and garlic. Fry. 10. Add honey and soy sauce. Fry. 11. Add cooked noodles and mix. 12. Add the sesame oil and mix again. 13. On a plate, place the noodles and top with a layer of the fried vegetables, followed by the egg strips. ** Ready! Wash thoroughly, like washing clothes, because the noodles have cornstarch on the outside to prevent them from sticking together. If you don't remove it properly, you'll lose their flavor and texture.
