Ingredients listed below: Duchess Potatoes Ingredients for about 16 2-inch-diameter swirls (4 generous servings) 1 1/2 to 2 lbs boiling or mashing potatoes (such as 'Yukon Gold') 1/2 teaspoon (or more to taste) kosher salt 3 tablespoons butter (salted or unsalted) at room temperature Grinds of black pepper 1/4 teaspoon ground nutmeg 3 egg yolks at room temperature Optional egg wash to enhance browning: 1 egg yolk beaten with 1 teaspoon cream Bake at 400°F until golden brown -- usually 15-20 minutes
