Jakub's favorite staff meal — and after tasting it, I understand why. Fuku Ramen is one of Amsterdam's most sought-after spots. A Polish chef, Japanese food, a tiny restaurant, and a waitlist that once moved faster than reservations at Noma. Jakub Karczewski grew up on a farm in Poland, where his grandmother cooked everything from scratch. He tried ramen once while studying hotel management — and that was it. One bowl. He moved to Amsterdam to visit his sister. Stayed. He opened Fuku Ramen with his wife Aleksandra Karczewski — she runs front of house, he runs the kitchen. They started with €2,000 left in their private account after the company money ran out. A week before opening, they still had no electricity. They sold the car. They opened anyway. Some guests have been back 80, 90 times. He makes the noodles himself. Always has.
