This week I spent a morning with the team at Tannay in Amsterdam, cooking the family meal - a beef bourguignon, an homage to the chef's home in Bourgogne. Marinated 24 hours in red wine, then cooked low and slow, the way it was made at his mother's table growing up. Thank you to the team at Tannat for having me.
